A Simple Fall Salad

Happy Wednesday, you guys! I’d originally planned this post for Monday, but as luck would have it, we’re getting over a nasty stomach bug at our house and I was in no shape to be blogging Monday. I’m so lucky to have a wonderful, caring husband who works from home, because he took care of Jensen and let me sleep all day long. J had the stomach bug for just three hours — they were three really heartbreaking hours — but I’m thankful his didn’t last any longer than that.

Now, it’s kind of odd that I’m blogging about a salad after that, isn’t it? I think so, too. Especially a salad with blue cheese.

Recently, I ordered the apple pecan chicken salad at Wendy’s and I kept thinking it would make for an easy, quick salad at home. I’m all for easy and quick these days, especially when it comes to what I’m eating for lunch (and able to scarf down in 5 to 10 minutes). My version is a little different and doesn’t include chicken, though it’d be easy to add if you wanted. This salad is perfect for fall.

I pretty much only eat spinach salad now. It’s good and it’s good for me, so I love it. I’m open to branching out, though I don’t particularly enjoy arugula all the time — a little too earthy for my taste — depends on what else it’s mixed with.

This is such a simple fall salad, y’all. All you need is:


half an apple

crumbled blue cheese

bacon bits

pecan halves

a fruity salad dressing (like a raspberry or pomegranate vinaigrette, balsamic vinaigrette will do, too)

Looks yummy, doesn’t it? And it’s filling, too. I’m pretty sure it’d taste just as good if you swapped the blue cheese for feta — I may do that next time!

If you’re anything like me, you drink a lot of coffee, and sometimes you need just a little something extra to make that second or third cup somehow more spectacular — besides the extra caffeine, of course.

Well, I’m here to offer some fun, easy suggestions!

These aren’t fancy ways to spruce up your coffee, y’all. They won’t require you to whip up anything special or add a ton of extra ingredients to your shopping lists. In fact,¬†you probably have several of these ingredients in your kitchen already — like I do — just waiting to be used in new, exciting ways.

Okay. Maybe these aren’t super exciting ways. But they’re fun nonetheless. Let’s get to it.

The first way to spruce up your coffee?

Add some whipped cream and cocoa powder.

Nothing fancy, Hershey’s will do! And while you’re at it, maybe enjoy a chocolate hazelnut cookie, too.

If you’re feeling slightly more adventurous and you love coconut as much as I do,

brew a coconut-flavored coffee with whipped cream and chocolate syrup on top.

I actually don’t suggest that you top the whipped cream with shredded coconut. It’ll float to the bottom and then you’ll get a little added texture with every sip — I’m a fan of coconut, just not the shredded variety (in my drink, at least).

I once had a mocha coconut frappuccino at Starbucks. I loved it so much that I bought a whole box of coconut-flavored coffee K-cups (back when we still had our Keurig) and made iced coconut coffee all summer. Turns out it’s pretty tasty warm, too.

Whenever I crave coconut coffee, I just brew up a batch, add a little milk and sweetener, and top with whipped cream and chocolate syrup. It’s even better if you can find a coconut-flavored creamer — like the Almond Joy one! It’s pretty good with chocolate biscotti, too.

If you’re feeling festive or just need a way to brighten a kinda sucky day,

add whipped cream and sprinkles.

I promise it doesn’t have to be your birthday for this one. Maybe it’s rainy outside or you just feel like making your coffee colorful. Whatever the reason, sprinkles are sure to sweeten up your coffee a bit more — and your attitude, too! Seriously. You have to try this one. So simple, yet so fun.

(Biscoff cookies are super fun and yummy, too.)

One of the simplest ways to spruce up your coffee?

Add whipped cream and cinnamon.

Seriously, y’all. I do this one all the time. I love getting that taste of cinnamon sugar and whipped cream with every sip or just licking it right off the top!

Adding a cinnamon stick or two makes for a yummy cup of coffee, too. And bite-sized biscotti is always a good idea!

The final way to spruce up your coffee is so simple and good that I wish I would’ve started doing this years ago…

Cold brew your coffee.

Seriously. There’s nothing like it. It’s just not the same when you brew your coffee the traditional way and then put it in the fridge overnight, like I’ve done so many times in the past! I recommend either The Pioneer Woman’s cold brew method or this one I found over at Craving Comfort. I personally prefer the latter.

Ready for Fall

By the time I’m done celebrating my birthday, I’m usually ready to trade in my wedges for boots, my shorts for skinny jeans and leggings, and all my summer decor for fall decor. September, October and November are by far my three favorite months of the year. I think I probably enjoy them more than the whole month of December. Christmas flies by — so much planning and preparation and hoopla, then it’s gone before you know it — but fall, in all its cozy and pumpkin-y glory,¬†sticks around for a good while longer. I love that first time you walk outside and can finally breathe in that cool, crisp autumn air. There’s nothing like it.

In other words, I’m ready for fall. I know most of you are, too. With temps climbing up to the high 90s here, I think it’s safe to say that summer has officially run its course.

Today’s my birthday. My 27th birthday to be exact! So I thought it’d be cool to share with you some of my favorite birthday gifts — ones I’d like to receive and ones I’d love to give or have already given in the past. Sometimes, especially when you wait till the very last minute, it can be hard coming up with a gift for a friend that’s useful, affordable and cute all at the same time. I don’t know about you, but where I live, it gets unbearably hot in the summer! I’m talking humidity so thick your face will melt off in a matter of seconds… As much as I love dressing up, for the most part it’s just so sticky and hot that trying to be cute with a ton of jewelry and an expensive top on (or jeans…well, forget about jeans!) ends up being more uncomfortable and miserable than anything else. If you’re chasing a little tot around about 90% of the time like I am or simply running errands, it’s best to stick to the basics: breathable shirts, a good pair of shorts, sandals or flip flops, and other light accessories to help you still feel pretty and fun…even if you have crusty graham cracker smeared on the sleeve of your shirt!

You can bet I’m still breakin’ out those cute wedges at night, though!
